Basically, it means that the higher the moisture content in a fruit or vegetable, the faster it'll lose its enzymes. Thus, the more ripe and fresh the produce, the better and quicker it'll be digested. On the contrary, the darker the cut of fruits and veggies, the slower it'll absorb the enzyme and the longer it'll remain in your stomach. Some of the examples of fruits with low moisture content include apples, bananas, avocados, spinach, celery, peaches, carrots, and pineapples. Although they are high in essential nutrients and antioxidants, they need to be cooked to prevent their damage caused by oxidation and browning. Plus, high heat exposure damages the outer layer of the produce which leads to browning or loss of nutrients. Remember that juicing fruits and veggies is not recommended if you intend to take care of them until they become fully ripened. With time, dark colours and dull flavour are inevitable. Don't despair though, as both blueberries and strawberries retain their original colour when kept in the refrigerator. Their antioxidant activity is stronger compared to red and yellow berries.
